Dr. Susan Baker is currently a Professor and Extension Specialist in the Department of Food Science and Human Nutrition at Colorado State University. She also serves as the Expanded Food and Nutrition Education Program (EFNEP) Coordinator for Extension in Colorado.

The training and development of paraprofessional nutrition educators is one of Susan’s passions. She coauthored a book entitled Maximizing Paraprofessional Potential. More recently, Dr. Baker led the development of a comprehensive nutrition education curriculum for use by paraprofessional nutrition educators entitled Eating Smart • Being Active. The curriculum is currently being used by over 40 US states and territories.

Dr. Baker’s research interests include nutrition education methodologies and the evaluation of nutrition education interventions with low-income women of childbearing age, and breastfeeding education and support.  She has led multiple nationally-funded grant interactions and peer-reviewed publications in each of these areas.
